2nd ADVENT SUNDAY - SPECIAL HOLIDAY COOKIES

DEAR LOVELY READERS , 
as promised this is my 2nd Advent - Sunday special post :)
I decided to do a special christmas cookies post. 
As you might have noticed already, being fit and healthy, as well as a healthy diet are very important to me. Last week when my craving for holiday cookies came up, I decided to do a makeover on my favourite cookies. 
THE CHALLENGE: Keep each cookie's yummy while lowering fat, sugar and calories! 
THE RESULT: sweet success :)
 200g dark chocolate ( I used Lindt 85%)
50g fat reduced butter
6 tbsp. rum  
100g coconutflakes 
50g grounded almonds 
1-2 knif tips stevia powder

 1. Place the chocolate in a double boiler and melt until smooth.
2. Batter the butter and add the stevia.
3. Stir the chocolate, 50g coconutflakes and almonds into the butter-stevia mixure and mix until evenly distributed. Blend in the rum and stir again.
4. Cover and refrigerate until firm for about 1 hour. 
5. Roll the chilled chocolate mixture into bite-sized balls. Roll the balls in the other part of the coconutflake. 
6. Enjoy your selfmade yummy Rum Balls :)
Special White Chocolate Rum Balls :
I used the same ingredients as for the normal rum balls, but replaced the coconutflakes with white chocolateflakes. 
175g/ 5 large eggwhites
50g grounded almonds and 50g coconutflakes
couple of drops vanilla extract
1 sache bourbon vanilla sugar
pinch of salt
1-2 knife-tips Stevia-sweet 90% powder dissolved in 1 table spoons hot water
lemon zest of 1 whole lemon mixed with 1 tsp. of sugar

1.Whip the egg whites to a stiff peak with electric mixer.
2.Dissolve the stevia-sweet powder in a table spoon of hot water, add any flavouring such as vanilla, and lemon zest and add to the egg whites. Mix well and then combine the egg whites with the coconutflakes and the ground almonds, best done  manually to keep the air in the egg whites.
3.Pre heat oven to 180 degree celsius. Have your baking tray with baking paper ready.
4.Place the egg white batter mix into a decorating bag without the star shaped tip, or use a freezer bag and cut a corner off – it helps make nice and evenly round little macaroons.
5.Squirt little hubs spaced out onto the lined tray and put it in the pre heated oven.
6.Bake for 5 minutes, check the colour, it might be necessary to turn the baking tray around to get an even golden colour, bake for a further 5 min until macaroons are light golden brown.
Take golden macaroons out and cool completely – this goes really quickly when they are on a cooling rack.
Now they are ready to eat and make sure you share them, as hey are really yummy and fluffy ;)
